Ingredients
Crushed Ice
Hot Chilli Wine
The Yea Winery, Cidery and Brewery - Ginger What? Ginger Beer!
Fresh Lime

METHOD


Place crushed ice in a glass, Mix 1/3 Hot Chilli Wine to 2/3 Ginger What? Ginger Beer! with a squeeze of fresh lime. Mix vigorously. Enjoy!! Repeat regularly for best results!

Drunken Chilli Cheesy Bread


Ingredients
Butter for the pan
1/2 Baguette, cut into 5cm slices
1/2 small onion, thinly sliced
50g thinly sliced cooked Ham
3/4 cup Chilli Wine
1/2tsp black Pepper
1 1/2 cups grated Gruyere

METHOD


Heat oven to 200 degrees Celsius. Place the bread in a buttered ovenproof skillet or casserole dish. Scatter the onion and ham over the bread. Pour the Chilli Wine over the onion and ham and sprinkle with the pepper and Gruyere. Bake until the cheese has melted and begun to brown at the edges, about 20 minutes. Serve

Chilli Wine Mussels


Ingredients Serves 4
4kg Mussels
125g Butter
1 Garlic clove, crushed
4 French Shallots, sliced
1 Leek, sliced
2 Bay Leaves
1/2 bunch Thyme
1 cup Chilli Wine

METHOD


Clean mussels under running water, scrubbing off any dirt or seaweed and removing beards.  Melt butter in a large saucepan over low heat.  Add the garlic, shallot, leek, bay leaves and thyme.  Cook for 6-7 minutes or until vegetables are translucent.  Add the mussels and the Chilli Wine, cover and increase heat to high.  Cook, stirring occasionally, for 3-5 minutes or until the mussels have just opened.  Discard any unopened mussels.  Transfer mussels to serving dishes and pour over the liquid.  Garnish with the parsley.  Season with pepper, if you like, but never with salt - the mussels will be salty enough.  Serve.
